Southern Nevada Health District’s Food Warmer Regulations:

Food warmers must be used in a way that does not cause food to become contaminated or unsafe for consumption. The regulations state that food must be held at a temperature of 135°F (57°C) or above, and food warmers must be able to maintain this temperature.
